Deep Fried without the Guilt
This summer some friends of mine were discussing the innumeracy of the set of objects that can be fried and in a separate conversation the unique and stunning cuisine available at state fairs, particularly mid-western ones.
The New York Times reported recently that some state fairs are banning trans fats from their ubiquitous fryers.
The article provides hilarious tongue-in-cheek (or is it serious?) reporting of the switch away from trans fats. Particularly amusing is the idea that people will feel less guilty eating elephant ears (fried dough with sugar), deep-fried oreos, and spaghetti on a stick (not fried as far as I know, but worth mentioning).
The article describes how mid-western chef's are pushing the envelope. They are innovating things that can be deep fried that even a clever group of college-age students with too much time on their hands didn't think of such as, Pepsi. (Which we call pop.) Yeah that's right. They are deep frying liquids. This is truly the cutting edge. Bobby Flay eat your heart out.
